Teaching

Dr. VanOverbeke is responsible for teaching undergraduate and graduate courses in Animal Science and currently serves as the Interim Assistant Dean for Academic Programs for the College of Agricultural Sciences and Natural Resources. Her teaching efforts generate over 650 student credit hours annually and she advises over 100 undergraduate students.

Research

Dr. VanOverbeke's research focuses on quality/sensory attributes related to beef cattle management and includes previous National Beef Quality Audits. Her goal is to develop a nationally recognized research program that provides valued scientific data to the academic community and valued information that can be applied in the meat industry to improve meat quality and safety with the use of pre and post harvest interventions.


About Dr. VanOverbeke

Dr. Deb VanOverbeke has a B.S. in animal science from University of Nebraska and a M.S. and Ph.D. in animal science from Colorado State University. Deb joined the Department of Animal and Food Sciences at Oklahoma State University in 2005. Deb is responsible for teaching undergraduate and graduate courses in Animal Science and currently serves as the Interim Assistant Dean for Academic Programs for the College of Agricultural Sciences and Natural Resources.

Her teaching efforts generate over 650 student credit hours annually and she advises over 100 undergraduate students and the Block and Bridle Club. Her research focuses on quality/sensory attributes related to beef cattle management and includes previous National Beef Quality Audits. She currently serves as Council Secretary on the OSU Faculty Council.

Her teaching and research efforts have been recognized by the North American Colleges and Teachers of Agriculture, American Society of Animal Science and American Meat Science Association. Deb and her husband, Kirk, have two children, Esther and Joshua.
